Pumpkin pineapple surprise bread!

One 9x5 inch loaf (12-14 slices)
Dry ingredients:

3/4 cups all purpose flour
3/4 cups whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
3/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground allspice
1/8 tsp ground nutmeg
Wet ingredients:
1 large egg + 1 egg white
3/4 cup sugar
2 cups pumpkin puree
3 tbsp olive oil/canola oil
1 tsp vanilla
1 cup crushed pineapple, with juice
Surprise layer:
4 oz fat-free cream-cheese
1 large egg

Pre-heat the oven to 325F
Combine and sift all the dry ingredients
Beat eggs until foamy, add sugar and beat again.
Add the pumpkin puree, oil, vanilla and pineapple.
Add the dry ingredients to the wet and mix until just combined. Do not over-mix.
Beat the cream-cheese and the egg, until fluffy.
Transfer half of the batter into a 9x5 inch loaf pan.
Spread the cream-cheese mixture over the batter.
Top it with the remaining batter.
Bake at 325 for 60-70 minutes.
Check if done by inserting a tooth-pick or a skewer.

Mocha Nut Biscotti with a touch of Butterscotch

Mocha Nut Biscotti with a touch of Butterscotch! (Makes nearly 35-40 biscotti)
Dry ingredients:
1 1/4 cup - all purpose flour
1 1/4 cup - whole wheat flour (I use it to add some healthy fiber, but, you can use just 2 1/2 cups of all purpose flour)
4 tbsp - instant coffee granules or espresso powder ( increase or decrease this according to preference.)
6 tbsp - cocoa powder
1 tsp - baking soda
1/2 tsp - ground cinnamon
1/4 tsp - ground nutmeg
1/2 tsp - salt
Wet ingredients:
1/2 cup - granulated sugar
1/2 cup - brown sugar
4 tbsp - olive oil (or canola oil. May be, butter if you really want it!)
1 1/2 tsp - vanilla
3 large eggs (2 large eggs and 1 egg white or egg substitute)
1 cup - slivered almonds (or any other nut. Dry roast it if needed)
1/4 cup - butterscotch chips (You can use white chocolate or any other kind of chips, too)

(1) Heat the oven to 350 F

(2)Beat the eggs and olive oil. Add the sugars, vanilla and beat/mix well.
(3)Sift all the dry ingredients together(The coffee granules might need a little more effort but make sure you get them almost powdered, else u might bite into coffee granules!)
(4)Add the dry into the wet ingredients, in batches. Add the nuts and form a dough (The dough is really really sticky at this stage and I swore I will never make this again!!!). You might have to add a little flour, knead a bit and divide the dough into two equal parts.
(5)On a sheet pan lined with parchment paper, spray some oil and place the two dough logs, at least 4-5 inches apart. Press them to about an inch thick, 5 inch wide, long log. Sprinkle a tsp of granulated sugar, just to make it festive! Bake them for about 20-22 mins. Check if done by inserting a toothpick in the middle of the log.
(6)Place the logs on wire-rack and let them cool and reduce the oven temp to 325 F
(7)Once completely cool, cut the logs into 1/2 inch thick slices.
(8)Place the slices flat on the sheet again and bake them for 10 mins on each side, at 325 F
(9)Cool completely. Microwave the butterscotch chips (45 secs-1min) and spread them on the biscotti with your finger or the handle of a spoon
(10)Sit back and enjoy it with a cup of warm milk!!!
